Bruschetta

This is one of my original recipes, but it's not an original dish. I just got tired of paying a lot of money is restraunts for an appetizer that seemed very simple. Endless variations with this one...

Ingredients:

  • 4-6 Roma tomatoes, diced
  • Fresh garlic, to taste (no powdered garlic for this one, but minced from a jar is fine)
  • Basil, to taste
  • Olive oil
  • 1 loaf Italian bread

Preparation

  1. Dice tomatoes
  2. Drizel with olive oil
  3. Add garlic and basil, to taste
  4. Chill to allow flavors to blend
  5. Serve on toasted Italian garlic bread.

Variations:

I've made many toppings for garlic bread and consider all to be Bruschetta, even if that's not traditional. Like many of my recipes, just have fun with it. Marinate in a drizzle of olive oil and garlic and whatever spice seems appropriate and enjoy. My favorites:

  • Thin sliced salmon
  • Mixed chopped olives
