Chicken Bacon Tidbits

This one is my own creation, though I doubt it's very original. I had something similar at an AGLA party and came up with this...

Ingredients:

  • 2 pounds boneless chicken breast
  • 2 cans sliced water chestnuts
  • 1 bottle low sodium soy sauce
  • 1 pound low fat bacon
  • toothpicks

Preparation:

  1. Cut chicken into 1inch pieces.
  2. Put in Tupperware-like container.
  3. Cover with soy sauce. (Note: garlic optional and maybe a little pepper)
  4. Marinate chicken for at least a few hours; I like to marinate it overnight.
  5. Press a water chesnut into a piece of chicken, fold the chicken over the water chestnut, and wrap in a half strip of bacon.
  6. Pierce with toothpick.
  7. Arrange chicken tidbits in rectangular glass baking dish.
  8. Bake at 425 for 45 minutes to an hour. When the bacon looks done, the dish is ready. (The bacon doesn't get crispy but you can tell when it's no longer raw.)

I've only made this a few times... so the two pounds chicken to one pound bacon may not be entirely accurate. I sometimes buy extra bacon so I don't run out.
