Chicken Shiskababs
Another recipe from Dotti. And another I haven't tried yet because I don't
have access to a grill, but these could be baked then finished in a broiler, flipping
ever few minutes. Good cooking is all about improvising.
Ingredients:
- A couple of boneless chicken breasts, depending on how many you want to feed.
Cut into cubes. ( fat ones )
- Red, orange or yellow peppers. Cut into chunks.
- A couple potatoes cut into chunks.
- Olive Oil
- 1 package dry italian dressing mix
- White wine vinegar
Preparation:
- Marinate all in olive oil, a bit of water, vinegar and one package of italian
dressing
- Using cheap wooden skewers available at most markets, put alternating chunks
of all above and sprinkle with herbs of your choice. I used Emerils basic the
last time & added a handful of fresh Basil leaves.
- Grill, turning frequently, until done.
Variations:
While I haven't tried this recipe, I have made shiskebob before. Substitute
beef for the chicken and the only major change would be to use red wine vinegar.
Other options:
- Cherry tomatoes
- Pineapple
- Whole, large mushrooms
- BBQ sauce
