Chicken Shiskababs

Another recipe from Dotti. And another I haven't tried yet because I don't have access to a grill, but these could be baked then finished in a broiler, flipping ever few minutes. Good cooking is all about improvising.

Ingredients:

  • A couple of boneless chicken breasts, depending on how many you want to feed. Cut into cubes. ( fat ones )
  • Red, orange or yellow peppers. Cut into chunks.
  • A couple potatoes cut into chunks.
  • Olive Oil
  • 1 package dry italian dressing mix
  • White wine vinegar

Preparation:

  1. Marinate all in olive oil, a bit of water, vinegar and one package of italian dressing
  2. Using cheap wooden skewers available at most markets, put alternating chunks of all above and sprinkle with herbs of your choice. I used Emerils basic the last time & added a handful of fresh Basil leaves.
  3. Grill, turning frequently, until done.

Variations:

While I haven't tried this recipe, I have made shiskebob before. Substitute beef for the chicken and the only major change would be to use red wine vinegar. Other options:

  • Cherry tomatoes
  • Pineapple
  • Whole, large mushrooms
  • BBQ sauce
