Mixed Nut Brittle

I got this recipe from Dave's mom, a frequent source for cooking ideas. This is a lot like peanut brittle, but uses lots of varieties of nuts and is very easy to prepare.

Variation

It's cheaper to make with all peanuts (and Dave's preference anyway)

Ingredients:

  • Two egg whites (if not jumbo eggs, use three)
  • 1 cup sugar
  • pinch of salt
  • 1 stick butter
  • Two pounds mixed nuts

Preparation:

  1. Preheat oven to 325 degrees.
  2. Melt butter and pour into baking pan. Set aside.
  3. In a large mixing bowl, separate three egg whites from the yolk. Discard yolk.
  4. With a whisk or electric mixer, beat egg whites until thick (frothy and white with peaks)
  5. Add pinch of salt and sugar. Mix well with whisk.
  6. Add nuts and fold into egg/sugar mixture with spatula.
  7. Spread across buttered pan.
  8. Bake for 30 to 60 minutes mixing/flipping every 10 minutes until all butter is gone.
  9. Allow to cool, mixing occasionally to separate the pieces.
