Corn Beef Rollups

This recipe is hardly original, but it is a variation I came up with.

Ingredients:

  • 8 large flour tortillas
  • 2 packages flavored cream cheese (whatever your favorite is; I use herb flavored)
  • 2 packages corned beef, sliced
  • garlic to taste (though for this recipe even I sometimes skip garlic.)

Preparation:

  1. Spread the contents of 1/4 of a container of cream cheese on a tortilla.
  2. Place 4 slices of corned beef on the cream cheese, towards the center but with minimal overlap.
  3. Tightly roll the tortilla, pressing out all air.
  4. Trim each end and eat or give to your partner to eat; the ends are too ugly to serve.
  5. Slice the rollup into about half inch slices.

Keep refrigerated until serving. Best served cold.
