Corn Beef Rollups
This recipe is hardly original, but it is a variation I came up with.
Ingredients:
- 8 large flour tortillas
- 2 packages flavored cream cheese (whatever your favorite is; I use herb flavored)
- 2 packages corned beef, sliced
- garlic to taste (though for this recipe even I sometimes skip garlic.)
Preparation:
- Spread the contents of 1/4 of a container of cream cheese on a tortilla.
- Place 4 slices of corned beef on the cream cheese, towards the center but
with minimal overlap.
- Tightly roll the tortilla, pressing out all air.
- Trim each end and eat or give to your partner to eat; the ends are too ugly
to serve.
- Slice the rollup into about half inch slices.
Keep refrigerated until serving. Best served cold.
