Tuna Melts

This is one of our favorites, but wasn't as healthy as I'd like so I've recently tweaked it to be lower in fat.

Ingredients:

  • 1 large can tuna in water
  • 6-8 cherry tomatoes, diced
  • 6-8 small dill pickles, diced (we like the jalapeño variety)
  • 1/2 cup lite mayo (Estimated amount; I add a few teaspoons at a time until I like the consistency. You don't want it runny but you want to taste the mayo.)
  • 1 cup low fat shredded cheddar cheese
  • English muffins
  • Garlic, pepper, or your favorite spices, to taste

Preparation:

  1. Toast the English muffins. Note: This recipe makes enough for 6-8 English muffin halves.
  2. Mix all ingredients but the English Muffins and half the cheese. This is a flexible recipe, so amounts and ingredients can vary.
  3. Top toasted muffins with about a quarter cup of the tuna mixture. Cover the entire surface for a little between 1/4 and 1/2 inch of topping.
  4. Top with remaining cheese.
  5. Bake at 350 for 15-20 minutes.
