Red Jalapeno/Habanera Jelly
I've never made this myself, but I've had Dott's pepper jelly and it's delicious.
Ingredients:
- 2-3 pounds red jalapeno peppers
- 15 cups sugar
- 3 cups apple cider vinegar
- 3 boxes Sure Jell
Preparation:
- Pick a whole pile out of the yard ( red only ) or if necessary buy 2-3 lbs.
at the store.
- Put on plastic or rubber gloves and cut off stems and take out most of the
seeds. BEST to do this OUTSIDE where there is AIR. If you must do it inside where
a breathing mask or you will choke on the fumes.
- Cut up the peppers and pulverize them in a small chopper.
- Put peppers in a large pan. 12 qt works best!
- Add
- 15 cups of sugar.
- 3 cups of apple cider vinegar.
- BOIL stirring constantly. When it gets to a full rolling boil continue stirring
for 4 minutes. Turn off heat and let rest for 1 min.
- Skim off white foam.
- Add 3 boxes of Sure Jell. ( Premium fruit pectin) Stir until smooth.
- Pour into sterilized jars ( dishwashered at least :) ) jelly jars.
- Let cool for 15 minutes and seal with melted Gulf Wax. Add lids.
Enjoy on crackers with a bit of cream cheese. Goes well with beer and wine.
